摘要
本文用紫外-可见分光光度计测定儿茶素对羟基自由基(·OH)、DPPH自由基、超氧自由基(O2-·)的清除效果,及对Fe3+的还原能力。结果表明,儿茶素对三种自由基均具有一定的清除效果,对Fe3+具有一定的还原能力,说明儿茶素均具有较好的抗氧化活性。
The UV-vis spectrum was used to determine the scavenging activity of catechin on hydroxyl radical(·OH), DPPH free radical, and superoxide radicals(O2-·), as well as the reducing power performance of Fe3+. The results show that catechin has a certain scavenging ability on three kinds of free radicals and a certain reduction ability on Fe3+, which indicating that catechin has a good antioxidant activity.
