浸泡条件对黄豆吸水率、发芽率及豆芽出品率的影响 被引量:2

摘要 为黄豆芽的工业化生产和精深加工提供理论依据,研究黄豆芽生产过程中浸泡温度、浸泡时间、浸泡水量对吸水率、发芽率和出品率的影响。结果表明:浸泡温度、浸泡时间和浸泡水量分别为40℃、6 h和4倍黄豆重量时,黄豆吸水率均最高,分别为111.88%、115.97%和114.18%;当浸泡温度、浸泡时间和浸泡水量分别为50℃、6 h和3倍黄豆重量时,黄豆的24 h发芽率、最终发芽率及出品率均最高,分别为53.00%、93.67%、388.77%,53.67%、91.33%、389.18%和55.33%、93.67%、418.45%。结合生产实际认为,黄豆芽生产最适宜浸泡工艺为浸泡温度50℃、浸泡时间6 h、浸泡水量3倍黄豆重量。 To provide a theoretical basis for the industrial production and deep processing of soybean sprouts,the effects of soaking temperature,soaking time,and soaking water volume on water absorption,germination and yield during the production of soybean sprouts were studied.Results:The water absorption rate reached the highest,111.88%,115.97%,and 114.18%respectively,when soaking temperature was 40℃,soaking time was 6 h,and soaking water volume was four times of the soybean weight.The 24 h germination rate,final germination rate,and yield rate reached the highest when soaking temperature was 50℃,soaking time was 6 h,and soaking water volume was three times of soybean weight,which were respectively 53.00%,93.67%and 388.77%;53.67%,91.33%and 389.18%;55.33%,93.67%and 418.45%.According to the comprehensive analysis of actual production,the most suitable soaking process for soybean sprouts production was soaking temperature 50℃,soaking time 6 h,and soaking water three times of soybean weight.
