两段式滚筒烘丝机干燥模式对烟丝致香物质的影响 被引量:2

摘要 为KLD-2Z两段式滚筒烘丝机控制模式的选择及关键工艺参数的优化提供科学依据,通过设置3种控制模式共计6个处理,研究两段式滚筒烘丝机干燥模式对烟丝致香物质的影响。结果表明:3种控制模式6个处理烟丝共检出主要致香物质有西柏烷类降解产物、芳香族氨基酸降解产物、美拉德反应产物、类胡萝卜素降解产物和叶绿素降解产物5个大类22种,致香物质总量为377.905~563.504μg/g,各致香物质含量除苯乙醛、糠醇和β-紫罗兰酮差异均不显著外,其余19种致香物质含量存在显著或不显著差异;经灰色关联分析,不同控制模式关联度为两区同温>前低后高>前高后低,致香物质综合含量为一二区筒壁温度均为140℃+热风温度为100℃(一段式控制模式)的致香物质综合含量最高,一区筒壁温度145℃+二区筒壁温度125℃+热风温度110℃(前高后低控制模式)其次,一区筒壁温度140℃+二区筒壁温度120℃+热风温度120℃(前高后低控制模式)最低。在一定范围内,较高的筒壁温度和较低热风温度有利于提高烟丝致香物质的含量。 In order to provide a scientific basis for the selection of the control modes of KLD-2Z two-stage drum dryer and the optimization of key process parameters,six treatments with three control modes were set to explore the effects of different drying modes of two-stage drum dryer on aroma substances in cut tobacco.Results:22 kinds of main aroma substances belonging to five categories were detected in the three control modes of six treatments of cut tobacco,including cembrane degradation products,aromatic amino acid degradation products,Maillard reaction products,carotenoid degradation products and chlorophyll degradation products.The total amount of aroma substances was 377.905-563.504μg/g.Except for phenylacetaldehyde,furfuryl alcohol andβ-ionone,the content of which was not significantly different,the content of the remaining 19 aroma substances had significant or insignificant difference;Grey correlation analysis showed that the correlation degree of different control modes sequenced as the same temperature of the two areas>low before high>high before low.One-stage control mode had the highest comprehensive content of aroma substances,with the cylinder wall temperature 140℃in both of the first and second zones+the hot air temperature 100℃,followed by the high before low control mode,with the cylinder wall temperature 145℃in the first zone+125℃in the second zone+hot air temperature 110℃.Another high before low control mode,with the cylinder wall temperature 140℃in the first zone+120℃in the second zone+hot air temperature 120℃,took the last place.Within a certain range,higher barrel wall temperature and lower hot air temperature are beneficial for increasing the content of tobacco aroma substances.
