Distribution and safety assessment of total mercury and methylmercury in common Boletus from different regions of Yunnan province from 2013 to 2017

摘要 目的研究2013~2017年云南不同地区249份野生牛肝菌样品中总汞及甲基汞含量分布,并对其进行安全评价。方法样品经微波消解仪处理后,采用电感耦合等离子体质谱法(inductively coupled plasma mass spectrometry,ICP-MS)检测牛肝菌中总总汞含量;样品经超声提取法处理后,采用液相色谱-原子荧光光谱大检测牛肝菌中甲基汞含量。结果牛肝菌对汞的富集能力较强,且在野生牛肝菌中广泛存在,本研究249份野生牛肝菌中总汞含量平均值为(0.3208±0.0199) mg/kg,甲基汞全部未检出。不同种类不同地区的牛肝菌中总汞含量存在差异。结论云南省野生牛肝菌中总汞含量水平较高,但根据世界卫生组织最大摄入量建议,60kg成人每周食用250 g牛肝菌,仍能保持较低风险。 Objective To determine the contents of total mercury and methylmercury in 249 samples of wild Boletus fungi collected from different area of Yunnan province, and make safety evaluation according to the results. Methods Using inductively coupled plasma mass spectrometry(ICP-MS) to measure contents of mercury in samples, which were treated with microwave digestion apparatus. Methylmercury in samples were determined by liquid chromatography-atomic fluorescence spectrometry(LC-AFS) after ultrasonic extraction y. Results Mercury could be enriched by Boletus fungi, and it existed extensively in different subspecies of Boletus. The average content of total mercury in 249 samples of wild Boletus was(0.3208±0.0199) mg/kg, and no methylmercury was detected. Mercury content in Boletus varied from region to region. Conclusion The level of total mercury in wild Boletus in Yunnan province is relatively high. However, according to the World Health Organization’s maximum intake recommendation, 60 kg adults can still maintain a low risk of consuming 250 g Boletus a week.
