水活度用于食品质量与安全控制的研究进展 被引量:3

摘要 随着人们生活水平的不断提升,食品的质量、安全问题得到了广泛的关注。针对食品质量和安全控制有着多种多样的方法和措施,而控制水活度就是其中一种。实际上,食岛在制造过程中出现的各种安全问题只是影响食品质量的一小部分,更多的安全问题存在于储藏、销售和运输过程中。因而在实际的食品管理过程中,需要将水活度控制在规定的范围内,以避免食岛出现各种安全隐患。
