摘要
本试验以初始水分含量为12.6%的小麦为原材料,在度夏期间(4—9月)探究了氮气气调与常规储藏条件下小麦的品质变化。试验过程中测定了小麦水分、发芽率、面筋吸水量、带菌量在不同储藏条件下的变化。研究结果表明,氮气气调较常规储藏条件下,小麦储藏品质的劣变能得到有效降低。
In this experiment,wheat with initial moisture content of 12.6%was used as raw material to study the quality changes of wheat under nitrogen controlled atmosphere and conventional storage conditions during the summer(April to September).The changes of wheat moisture,germination rate,gluten water absorption and bacteria content under different storage conditions were measured.The results show that the deterioration of wheat storage quality can be effectively reduced by air nitrogen controlled atmosphere compared with conventional storage conditions.
