摘要
随着生物提取技术的发展,生物性蛋白原料廉价易得。利用动植物蛋白来提取活性肽由于可控性强、条件温和,不但成功率高,而且较为安全,分解技术越来越成熟,方法也多种多样。从蛋白原料的选取、结构分解流程、酶法水解蛋白分子效果的角度出发,详细介绍一种基于水解蛋白酶的全蛋白分子分解进而制备生物活性肽的技术,希望能对相关研究者有所裨益。
With the development of biological extraction technology,biological protein raw materials are cheap and easy to obtain.Because of its strong controllability and mild conditions,the extraction of active peptides from animal and plant proteins not only has high success rate,but also is relatively safe.The decomposition technology is becoming more and more mature.Methods are also varied.From the point of view of the selection of protein raw materials,the process of structure decomposition and the effect of enzymatic hydrolysis of protein molecules,a technique based on hydrolytic protease for the decomposition of whole protein molecules to prepare bioactive peptides is introduced in detail,which is hoped to be beneficial to relevant researchers.
