荸荠皮多糖可食用复合膜的研制 被引量:2

摘要 荸荠皮中多糖含量十分丰富,可以通过提取加工成可食用膜,具有可食用、可降解、无污染等特点。实验以抗拉强度和水溶解速度为指标,研究羧甲基纤维素钠、海藻酸钠、甘油以及玉米淀粉对膜性能的影响,制备一种低成本、高性能的荸荠皮多糖可食用复合膜。通过单因素实验及正交试验,确定可食用膜制备的最佳配方为羧甲基纤维素钠0.08%、海藻酸钠0.08%、甘油0.08%、玉米淀粉0.06%,用此配方制备的可食用膜的抗拉强度为5.74MPa,溶解速度小于18s/g。 The content of polysaccharide in eleocharis tuberosa peel is very rich.It can be extracted and processed into edible film,which has the characteristics of edibility,degradability and non-pollution.The effects of sodium carboxymethyl cellulose,sodium alginate,glycerol and corn starch on the properties of the film were studied by taking the tensile strength and water dissolution rate as the indexes.A low-cost and high-performance edible polysaccharide composite film of eleocharis tuberosa peel was prepared.Through single factor and orthogonal test,the optimum formula for preparing edible film is 0.08%of sodium carboxymethyl cellulose,0.08%of sodium alginate,0.08%of glycerol and 0.06%of corn starch.The tensile strength of edible film prepared by this formula is 5.74 MPa,and the dissolution rate is less than 18 s/g.
