摘要
以吡嗪类致香为主要研究代表物,通过不同的反应设备,对主要致香物质反应前后含量的变化,旨在研究压力对模型体系中美拉德反应的影响程度。结果表明:在其他条件不变的情况下,压力对美拉德反应促进作用会加强,研究结果有助于对国内现行的美拉德反应设备进行一定的压力技术改造,为应用美拉德反应提供新思路,为超高压作用下美拉德反应的途径及其机理研究奠定理论基础。
In this experiment,pyrazine is the main research representative.Through different reaction equipment,the change of the content of the main aromatizing substances before and after the reaction is aimed at studying the influence of pressure on the Maillard reaction in the model system.The results show:When other conditions remain unchanged,the promoting effect of pressure on Maillard reaction will be strengthened,and the research results will help to carry out certain pressure technical of the current Maillard reaction equipment in China,and provide new ideas for the application of Maillard reaction,lay a theoretical foundation for the study of Maillard reaction pathway and mechanism under ultra-high pressure.
