甘薯的功能性成分及其开发利用途径 被引量:10

Functional Components and Development and Utilization Pathways of Sweet Potato

摘要 甘薯作为一种重要的粮食作物,富含淀粉、多糖、蛋白质、矿物质、维生素等多种物质,一直以来广受人们的青睐和重视。前期研究发现,甘薯的功能性成分具有抗氧化、抗癌、免疫调节以及改善肠道菌群等功效,有利于提高我国居民健康水平。然而目前,我国对于甘薯皮和茎叶的利用率不高,造成大量的功能性成分浪费,限制了甘薯产业的发展。因此,通过论述近年来国内外关于甘薯多糖、类胡萝卜素、蛋白等功能性成分及其保健功能的研究,并深入探讨功能性成分的开发利用途径,从而提高甘薯的综合利用价值,进一步为功能食品开发和农产品加工利用提供理论依据。 As an important food crop,sweet potato is rich in starch,polysaccharides,protein,minerals,vitamins and other substances.It has been widely favored and valued by people.Earlier studies found that the functional ingredients of sweet potatoes have the effects of antioxidant,anti-cancer,immune regulation and improvement of intestinal flora,which are conducive to improving the health level.However,the utilization rate of sweet potato skins,stems and leaves is not high in our country at present,which can cause a large amount of waste of functional ingredients.This article summarizes that the recent research progress on the functional components of sweet potato polysaccharides,carotenoids,proteins and health functions.Besides,by exploring the development and utilization of functional components,promote the efficient use of sweet potato resources,increase the comprehensive value of sweet potato,and further provide a theoretical basis for the development of functional food and the processing of agricultural products.
