摘要
目的了解嘉兴市2018年食品中食源性致病菌污染情况,为食源性疾病的防控提供依据。方法检测按照GB 4789食品安全国家标准食品微生物检验的要求,对2018年嘉兴市10大类食品共计492份样品,进行副溶血性弧菌、金黄色葡萄球菌、蜡样芽胞杆菌、沙门菌等12种食源性致病菌检测和分析。结果在492份样品中共检出致病菌75株,总检出率为15.24%。副溶血性弧菌检出率最高(26.15%);各类食品中水产品污染最严重(42.42%);餐饮服务和流通环节是致病菌主要污染环节;散装食品检出率(18.55%)明显高于预包装食品(9.20%)(χ^2=7.623,P <0.05)。结论嘉兴市食品中存在不同程度食源性致病菌污染,相关部门应针对重点食品、环节,加大监管力度,减少食源性疾病的发生。
Objective To investigate the contamination of food-borne pathogens in Jiaxing City in 2018,so as to provide scientific basis for the prevention and control of foodborne diseases. Methods According to the requirements of Zhejiang Food Safety Risk Monitoring Program 2018,492 samples in 10 kinds of food from Jiaxing City were collected in 2018,12 kinds of pathogenic bacteria,such as Vibrio parahaemolyticus,Staphylococcus aureus,Bacillus cereus and Salmonella,were detected and analyzed. Results A total of 75 positive samples were detected in 492 samples,with the total detection rate of 15. 24%. The detection rate of Vibrio parahaemolyticus was the highest( 26. 15%);the pollution in aquatic products was the most serious( 42. 42%);restaurant service and circulation are the main contamination links of pathogenic bacteria. The detection rate of bulk food( 18. 55%) was significantly higher than that of pre-packaged food( 9. 20%)( χ^2= 7. 623,P < 0. 05). Conclusion Food-borne pathogenic bacteria contamination in Jiaxing City. However,supervision of key foods and key links should be strengthened to reduce the incidence of food-borne disease.
