摘要
花色苷类物质广泛存在于天然植物资源及食物中,大量研究表明,花色苷的摄入与其生物学效应呈正相关。本文从花色苷化学结构、稳定性及其在生物体内不同部位的吸收代谢等方面阐述了近年来关于花色苷生物利用度的研究进展,并对影响花色苷活性及生物利用度的主要因素与作用机制进行了展望,旨在为人类膳食指南与人类流行病学的研究提供理论依据。
Anthocyanins are widely found in natural plant resources and foods,and a large number of studies have shown that the intake of anthocyanins is positively correlated with their biological effects.This review based on the chemical structure,stability,and the digestion and absorption in different parts of the body to expounds the bioavailability of anthocyanins in recent years,the prospect of the in-depth research on the influence of the main factors and mechanism of anthocyanins bioavailability was put forward,provide a theoretical basis in the dietary guidelines for humans and human epidemiological studies.
