西藏黑木耳营养粉的研制 被引量:2

The Nutrient Powder from Auricularia auricula in Tibet

摘要 以西藏米林县人工栽培黑木耳子实体为主要原料,添加青稞及其他辅料,制备黑木耳冲调营养粉。研究应用兼有上下限的混料设计,以感官评价为检测指标对混合粉进行配方的优化。结果表明最佳配方为:黑木耳19.3%、青稞13.5%、木糖醇9.6%、黑芝麻14.1%、红枣9.7%、百合7.5%、核桃11.7%、果蔬粉6.1%。黑木耳营养粉产品的开发可增加米林县袋料栽培黑木耳产业生产过程中产生碎耳和次等耳的利用率。 The nutrient powder from Auricularia auricula suitable for the hyperglycemic people was developed,using artificially cultivated Auricularia auricula as the main raw material,where highland barley and other ingredients were added.Using sensory evaluations as the index for both upper and lower bounds constraints mixture design,the best formula of Auricularia auricula nutrient powder as follows:Auricularia auricula 19.3%,highland barley 13.5%,xylitol 9.6%,black sesame 14.1%,red date 9.7%,lily 7.5%,walnut 11.7%,and fruit and vegetable powder 6.1%.The development of nutrition powder products could increase the utilization rate of broken ears and inferior ears in the production process of Auricularia auricula industry in Milin of Tibet.
