摘要
乳酸链球菌素(Nisin)是食品药品监督管理局(FDA)允许用作食品添加剂的天然肽类细菌素,其在畜牧和医学中同样具有巨大的应用前景,但Nisin在应用中仍存在较多问题,例如它的降解、与食品成分的相互作用均会限制它的使用,文章简要讨论Nisin在应用中存在的问题以及新进展和新前景。
Nisin is a natural peptide bacteriocin that is allowed by FDA to use as food additive.It's al⁃so has great application prospect in animal husbandry and oral medicine.However,there are still many problems in the application of Nisin,including its degradation,and the interaction with food in⁃gredients will limit its use,this paper gives a brief discussion of Nisin in current problems,new prog⁃ress and new prospects in the application.
