摘要
本研究以壳聚糖接枝原花青素衍生物为基材,采用喷涂法制备了具有高抗氧化活性的壳聚糖原花青素负载氧化石墨烯薄膜(GO‒G‒CS/PC)用于奶酪包装。在5℃和25℃储存30天条件下,以聚乙烯膜(PE)、纯壳聚糖膜(CS‒control)、壳聚糖-原花青素物理共混膜(C‒CS‒PC)和壳聚糖接枝原花青素膜(G‒CS/PC)包装的奶酪作为对照物,对GO‒G‒CS/PC膜包装的奶酪感官评价、颜色、pH值、菌落总数和过氧化值进行测试。结果发现,GO-G-CS/PC膜包装的奶酪,在5℃储存30天时,其过氧化物值为1.65meq/kg,较PE膜包装的奶酪降低25.33%,较CS-control膜包装的奶酪降低24.65%。此外,GO-G-CS/PC膜包装的奶酪其菌落总数和感官评价优于其他包装材料。测试实验证明,GO‒G‒CS/PC膜是一种优良的奶酪包装材料。
In this study,Chitosan grafted procyanidin derivatives loaded GO(GO‒G‒CS/PC)film was prepared with spraying method for cheese packaging.During storing at 5℃and 25℃for 30 days,the sensory evaluation,color,pH value,total bacterial count and peroxide value of cheese packaged with GO‒G‒CS/PC film were tested.Meanwhile,PE film,CS‒control film,C‒CS‒PC and G‒CS/PC were used as control.The peroxide value(1.65meq/kg)of cheese packaged with GO‒G‒CS/PC film stored at 5℃was 25.33%lower than that of PE film and 24.65%lower than that of CS‒control film.In addition,the total plant count and the sensory evaluation of cheese packaged with GO‒G‒CS/PC film were better than that of other packaging materials.It proved that GO‒G‒CS/PC film is an excellent cheese packaging material.
