改良凯氏定氮法的研究进展

Advances of Improved Kjeldahl Method

凯氏定氮法是应用最广泛的测定蛋白质含量的方法,但由于该方法存在耗时较长等不足,为提高生产效率、适应当代产业需要,研究人员不断对对凯氏定氮法进行改良研究。凯氏定氮法改良围绕消煮、蒸馏和滴定这3个环节进行,主要目的是缩短检测时间和提高准确度,该文综述了不同环节的改良方法及其应用,对凯氏定氮法改良存在的问题进行探讨并提出建议。

Kjeldahl method is the most widely used method for determination of protein content,but it has some shortcomings,such as time-consuming.To improve production efficiency and meet the need of modern industry,researchers have continued to improve the method.The improvement has been carried out around three aspects:digestion,distillation and titration.The main purpose is to shorten the detection time and improve the accuracy.This article summarized the different improvement methods and the utilization,and discussed the existing problems in it and put forward some suggestions.
