航天调味品原料质量安全管理之探讨

摘要 随着我国载人航天工程的快速发展,深入研究和运用航天食品质量安全保证管理机制,是保障航天员顺利完成航天任务的关键。优质安全的原料是生产航天食品的基础,一些未知的由原料带来的不确定或无法监测的安全隐患,都会给原料的质量安全控制带来难题。通过论述航天调味品原料源头管理复杂性,从研发设计、新供应商准入管理、危害风险评估及管制方案、追溯管理等方面实践,探讨了实施航天调味品原料质量安全管理机制,以确保原料安全质量的“零缺陷”。 With the rapid development of China's manned space engineering,in-depth study of safety and quality for aerospace use food management is the key to protect the astronauts to complete the space missions successfully.High quality and safe raw materials are the foundation of aerospace use food production.Hidden food safety issue can come from raw material with unknown source and defect can be undetectable.This paper discussed the complexity of raw material control in the aspects of research and development design,new supplier assessment,hazard risk assessment and control measures,and traceability management in this paper.The following details how adopt management system for aerospace use condiments raw materials control,and ensured the“zero defect”no matter for safety and quality.
