2018年上虞市售婴幼儿谷类辅助食品中痕量元素的检测与分析 被引量:3

Determination of trace elements in cereal-based complementary foods for infants and young children on Shangyu market in 2018

摘要 目的了解上虞市售婴幼儿谷类辅助食品中铅、镉、汞、总砷和总铬的含量水平,为制定婴幼儿谷类辅助食品中痕量元素污染应对措施提供依据。方法采集2018年上虞商店、农贸市场等地点销售的婴幼儿谷类辅助食品共125份,根据GB5009.268—2016《食品中多元素的测定》,采用电感耦合等离子体质谱仪检测其中铅、镉、汞、总砷和总铬的含量,应用SPSS20.0软件对数据进行统计分析。结果125份谷类辅助食品中铅、镉、汞、总砷和总铬的检出率分别为64.8%(81/125)、94.4%(118/125)、54.4%(68/125)、74.4%(93/125)和85.6%(107/125),铅、汞、总砷和总铬均未检出超标样,镉的超标率为6.4%(8/125),含量均值分别为0.0172mg/kg、0.0179mg/kg、0.00374mg/kg、0.0377mg/kg和0.0437mg/kg,城区市售谷类辅助食品铅汞含量较高,检出率高于乡镇(P<0.05),国产和进口谷类辅助食品中5种痕量元素的含量、检出率和超标率差异均无统计学意义(P>0.05),检出率在51.5%~95.5%,有机和普通谷类辅助食品中5种痕量元素的含量差异均无统计学意义(P>0.05),添加果蔬、肉类的样品铅含量较高(P<0.05),均值为0.0182mg/kg,无添加的样品总砷含量较高(P<0.05),均值为0.0457mg/kg。结论上虞市售婴幼儿谷类辅助食品中5种痕量元素总体污染水平较轻,但部分样品检出镉超标,需继续加强监测和管理。 Objective To investigate the concentrations of lead,cadmium,mercury,total arsenic and total chromium in cereal—based complementary foods for infants and young children on Shangyu market in 2018,and to provide basis for formulating the control measures.Methods A total of 125 samples were collected from farms’markets and stores in Shangyu.According to the GB 5009.268-2016 Determination of Multiple Elements in Food,the contents of lead,cadmium,mercury,total arsenic and total chromium in food were detected by an inductively coupled plasma mass spectrometer.SPSS 20.0 software was used for statistical analysis of the data.Results The detection rates of lead,cadmium,mercury,total arsenic and total chromium were respectively 64.8%(81/125),94.4%(118/125),54.4%(68/125),74.4%(93/125)and 85.6%(107/125).The violation rate for cadmium was 6.4%(8/125),and the contamination levels of other elements were all under legal limits.The mean values of lead,cadmium,mercury,total arsenic and total chromium were respectively 0.0172 mg/kg,0.0179 mg/kg,0.00374 mg/kg,0.0377 mg/kg and 0.0437 mg/kg.The concentrations of lead and mercury for cereal-based complementary foods in city was higher,and the violation rate in city was higher than in rural town(P<0.05).The differences of contents,detection rates and violation rates for the five trace elements between domestic and imported cereal-based foods had no statistical significance(P>0.05).The detection rate were within 51.5%-95.5%,and the differences of contents between organic and non—organic cereal—based foods also had no statistical significance(P>0.05).The concentrations of lead in cereal-based complementary foods added with vegetables,fruits or meat were higher,and the mean value was 0.0182 mg/kg(P<0.05).The concentrations of total arsenic in foods with nothing added were higher(P<0.05),and the mean value was 0.0457 mg/kg.Conclusion The overall contamination level of five trace elements in cereal-based foods was not high in Shangyu City,but the concentrations for cadmium in several samples were beyond legal limit,so risk monitoring and control measures should be strengthened.
