高职酒店管理专业餐饮服务类技能大赛的训练创新实践研究

摘要 当前,高职酒店管理专业餐饮服务技能大赛的训练存在诸多不足,其主要表现为训练体系不合理、参与主体较单一、保障措施缺乏等。高职酒店管理专业可根据职业技能大赛的实际需要,采用递进式的训练流程来提高学生的职业素养和综合技能;通过积极调动学生、指导教师、企业等参与来完善训练机制;采取针对竞赛训练的相应保障措施,确保职业技能大赛训练的效果。 At present,there are many deficiencies in the training of catering service skills competition of hotel management major in higher vocational colleges,such as unreasonable training system,single participants,lack of safeguard measures and so on.According to the actual needs of vocational skills competition,the college can adopt progressive training process to improve students’professional quality and comprehensive skills;actively mobilize students,instructors,enterprises and other participation to improve the training mechanism;take corresponding safeguard measures for competition training to ensure the effect of vocational skills competition training.
