摘要
通过对《齐民要术》中制曲、酿酒术的研究,发现早在北魏时期,就对如何择地、选粮、用料、制曲、酿酒等整个工艺流程有着详尽的记载。初具现代酱香型、浓香型、清香型白酒酿造的雏形。
According to the records about Qu-making and wine-making in Qimin Yaoshu,Chinese people have mastered the whole process of place selection,grain selection,raw material using,Qu-making and wine-making as early as the Northern Wei Dynasty.Since then,the production technology of modern Jiangxiang Baijiu,Nongxiang Baijiu and Qingxiang Baijiu has begun to take shape.
