摘要
对制曲原料小麦进行了润料水量和润料时间的研究,得出了:①8h小麦整体吸水量达到饱和,同时,吸入的水量与润料水用量成正比;②12h小麦内部吸水量达到饱和,同时小麦内部吸入的水量与润料水用量成正比;③加水量一定的条件下,随润料时间的延长,出粉率基本呈直线上升状态。加水量越多,同等润料时间的出粉率越高,随时间延长的出粉率增幅也越大。结果为制曲前期小麦的润料工艺提供科学的参数,奠定大曲发酵的基础。
The moisture amount and moisture time of raw material wheat were studied, and the results were as follows:(1) 8 h overall water absorption of wheat reached saturation, at the same time, the amount of water inhaled was proportional to the amount of moisture. The internal water absorption of wheat reached saturation at 12 h, and the internal water intake of wheat was in direct proportion to the amount of wetting water. Under the condition of adding a certain amount of water, with the extension of the wetting time, the powder yield is basically in a straight line. The more water is added, the higher the yield of the same wetting time is, and the higher the yield increases with time. Results the scientific parameters were provided for the wetting process of wheat and the basis of daqu fermentation was established.
