将山东与山西不同产地的清香大曲使用于武汉某公司清香基酒的生产,两种大曲在理化指标上相近,生产过程中温升大曲线类似、在新产酒的出酒率上山东大曲要高出山西大曲2.38%,新产酒的理化指标检测上二者相近,品评员的评审结果山东大曲要略优于山西大曲,由此可判断武汉地域生产清香型酒用大曲更适合山东大曲。
