摘要 特殊医学用途配方食品是为了满足目标人群对营养素或膳食特殊需要而生产的食品,其配方应以医学或营养学的研究结果为依据。本文以各种营养素的物理化学特征为基础,对产品开发过程中的各种营养素含量变化与工艺参数的相关性进行总结,为特殊医学用途配方食品处方和工艺的快速开发奠定基础。 Food for special medical purposes is to meet the special needs of the target population for nutrients or diet.The formula should be based on the results of medical or nutritional research.Based on the physical and chemical characteristics of various nutrients,this article summarizes the correlation between the content of various nutrients and the process in the product development process.It will lay the foundation for the rapid development of prescription and technology for food for special medical purposes.
