摘要 以"生产性"导向的模拟厨房教学模式开展教学研究,探讨基于(成果)产出教育的培养目标、模拟厨房教学模式建构。探索与之关系密切的现代学徒制、融合型链式课程系统开发、模拟厨房教学模式的运作机制以及模拟厨房教学模式持续跟进的评价体系。从多方面多维度解析专业与行业的对接、课程标准与专业标准对接、教学过程与生产过程的对接等问题。 This paperuses the teaching mode ofproductivity-oriented simulated kitchen to carry out teaching research,and discusses the training objectives based on the achievement of education and the construction of simulated kitchen teaching mode.This paper explores the modern apprenticeship,the development of integrated chain curriculum system,the operation mechanism of simulated kitchen teaching mode and the evaluation system of continuous follow-ups.It analyzes the connection of majors and industries,the connection of curriculum standards and professional standards,and the connection of teaching and production processes from multiple aspects and dimensions.
