摘要
维生素C与Mo(Ⅵ)和PO43-反应的溶液随维生素C的浓度从1~16μg/m L有颜色深浅的变化。为了探求颜色变化与维生素C浓度之间的关系,本研究含红绿蓝(RGB)手机比色装置设计、图像采集方式和图像数据处理。RGB值由Colorgrab软件实时抓取,红色通道值与浓度之间服从线性关系,相关系数达到0.9985以上。将该方法和磷钼蓝分光光度法比较,对市售7种果蔬的维生素C含量进行测定。对于深色果蔬,手机比色图像A法、B法与磷钼蓝法则有显著性差异(p<0.05);对于浅色果蔬,手机图像A法和磷钼蓝法无显著性差异(P>0.05),而手机图像B法和磷钼蓝法有显著性差异(P<0.05)。手机图像A法更适合果蔬Vc的手机比色法,既快速简便又能适用于现场检测。
It is discovered that the color of the reaction solution between Vitamin C, PO43-and Mo(VI) changes corresponding to the change of Vitamin C concentration from 1 to 16 μg/mL. For seeking for relationship between color changes and Vitamin C concentrations, the research includes measurement equipment development, image acquisition tool and data process of RGB image. Color grab was used as grasping the RGB Values. Relationship between color changes(255-R values) and five concentrations of Vitamin C obeys the linear function and the coefficeient R2 was over 0.9985. For the dark color fruits and vegetables, the two designed methods were significantly different from the method of phosphomolybdate blue(P<0.05). For the light fruits and vegetables, method B was consistent with the method of phosphomolybdate blue spectrophotometry(P>0.05), but method A was significantly different from the method of phosphomolybdate blue(P<0.05). Method B is more suitable for cell phone colorimetry of fruits and vegetables VC. This method is simple and suitable for on-site detection.
