复合维生素对林下养殖模式下清远麻鸡肌肉品质与谷氨酸、肌苷酸及肌内脂肪含量的影响 被引量:6

摘要 试验旨在探究复合维生素对林下养殖模式下清远麻鸡肌肉品质与谷氨酸、肌苷酸及肌内脂肪等风味物质含量的影响。选用初始体重相近的60日龄清远麻鸡400只,随机分为实验组和对照组,每组5个重复,每个重复40只鸡。处理组在饮水中添加0.01%的复合维生素,各组鸡只放养在桉树林下,试验为期100 d。结果表明:①复合维生素显著提高了清远麻鸡120~160日龄时体重(P<0.001);②添加复合维生素显著提高试鸡宰后45 min、宰后24 h胸肌的L*值(P<0.05),降低b*值(P<0.05),并降低胸肌的滴水损失与剪切力(P<0.05);③复合维生素增加清远麻鸡胸肌中谷氨酸、肌苷酸及降低肌内脂肪的含量(P<0.05)。添加复合维生素可显著提高林下养殖模式下清远麻鸡的体重,改善肉品质,并增加胸肌中谷氨酸、肌苷酸及肌内脂肪等风味物质的含量,从而改善肌肉风味。 This experiment was conducted to investigate the effect of multivitamin on the meat quality and the contents of glutamic acid,inosinic acid and intramuscular fat in muscle of the Qingyuan partridge chickens.Four hundred 60-day-old Qingyuan partridge chickens were randomly divided into 2 groups,and were given waters with or without 0.01%multivitamin,with 5 replicates and 40 chickens per replicate.①Compared with chickens in control group,the multivitamin significantly increased the body weight of Qingyuan partridge chickens at 120 to 160 days of age(P<0.001);②The multivitamin significantly increased L~*value 45 minutes and 24 hours postmortem(P<0.05),and decreased b~*value,drip loss and shear force(P<0.05)of breast muscle;③The multivitamin、increased the contents of glutamic acid,inosine acid and intramuscular fat of breast muscle(P<0.05).Supplementation of multivitamin increased the body weight of Qingyuan partridge chickens,improved the quality and enhanced the the contents of glutamic acid,inosinic acid and intramuscular fat in muscle,so as to improve the flavor of chicken.
