摘要
果蔬是人体维生素、矿物质、蛋白质、碳水化合物等的重要来源,含有多种功能性成分,是维持人体生理活动和增进健康的重要食物。随着居民受教育程度和家庭收入的普遍提高,消费者对于果蔬的消费观念发生了根本性改变,关注点从价格转向品质。我国果蔬生产总量大、品种多,但是果蔬产业供给侧结构性矛盾也逐渐凸显,高品质果蔬供不应求,而普通果蔬过剩滞销。目前,果蔬采后品质分级评价仍靠人工、简单机械粗略检测,或者采用破坏性抽检的方法,从而衍生了多种简单、高效品质评价方法,如近红外光谱、高光谱成像等无损检测技术。针对我国果蔬产业现状,综述果蔬品质分析评价中所使用的无损检测技术及其应用情况,为完善果蔬品质评价系统提供参考。
Fruits and vegetables are important sources to maintain physiological activity and to improve health,which contain various vitamins,minerals,proteins,carbohydrates,and other functional nutrients.With the general improvement of residents’education and household income,consumers’attitude towards fruits and vegetables has been changed,focusing on quality over price.The total amount of fruit and vegetable production in China is large and there are many varieties,but the structural contradictions on the supply side of the fruit and vegetable industry have gradually become prominent.The supply of high-quality fruits and vegetables is in short supply,while the surplus of ordinary fruits and vegetables are surplus.At present,the postharvest quality evaluation of fruits and vegetables still relies on manual,simple mechanical rough inspection,or destructive sampling methods,which has derived a variety of simple and efficient quality evaluation methods,such as near-infrared spectroscopy,hyperspectral imaging and other non-destructive inspection techniques.In view of the status quo of the fruit and vegetable industry in China,this study summarized the non-destructive testing technology used in the application of fruit and vegetable quality analysis and evaluation and its application,so as to provide references for perfecting the fruit and vegetable quality evaluation system.
