摘要
电子舌技术是一种模拟人类的舌头及其神经系统信息处理的智能味觉仿生系统,具有客观、快速、简便等优点,已在食品、药品、茶叶及酒类等行业广泛应用。本文介绍了电子舌系统的组成及原理,总结并归纳了电子舌在中药领域的应用,包括鉴别药材的种类、产地、采收及储存时间、炮制程度,评价中药五味及其药效物质基础、掩味效果、中药质量及临床试验中安慰剂的味道等方面的研究进展,以期为电子舌技术在中药研究领域的应用提供借鉴和参考。
Electronic tongue technology is an intelligent taste bionic system that simulates the information processing of human tongue and its nervous system.It is objective,fast and simple,and has been widely used in food,medicine,tea and wine industries.This paper introduces the research progress in the composition and mechanism of electronic tongue system,summarizes and induces the application of electronic tongue in traditional Chinese medicine,including identifying medicinal herbs,producing area,collecting,processing and storage time,evaluating mixed traditional Chinese medicine and material base for its efficacy,covering effect,the quality of traditional Chinese medicine,and the taste of a placebo in clinical trials.The research progress of the taste of placebo is expected to provide reference for the application of electronic tongue technology in the field of Chinese medicine research.
