摘要 荸荠是中国特色农产品,产量大,但是保鲜期短,上市产品种类单一,无法满足市场需求。对荸荠近十年来的资源开发利用包括荸荠的贮存保鲜、荸荠果汁及各种饮用品加工工艺、荸荠废弃物的应用方法及其它新的应用方向进行系统的梳理,对荸荠的保鲜及综合利用方面提出展望,旨在为荸荠资源的进一步开发利用提供理论依据。 Water chestnuts are characteristics agricultural products in China,which have a large output,but the shelf life is short,and the types of products on the market are single,which can′t meet market demand.The resource development and utilization of water chestnut in the past ten years,included the storage and preservation,the processing technology of juice and various drinking products,the application methods of waste and other new application directions,and the preservation and comprehensive utilization of water chestnuts were intrduced systematically.Prospects were proposed in order to provide a theoretical basis for the further development and utilization of water chestnut resources.
