复合益生菌发酵饲料对纳雍土鸡生长性能、屠宰性能和肉品质的影响 被引量:27

摘要 文章旨在研究复合益生菌发酵饲料对纳雍土鸡生长性能、屠宰性能和肉品质的影响,试验采用单因素试验设计,将120只40日龄的健康纳雍土鸡随机分成2组(对照组和试验组),对照组饲喂基础日粮,试验组饲喂复合益生菌发酵饲料,检测平均日增重、平均日采食量、料重比、屠宰率、半净膛率、全净膛率、胸肌率、腿肌率、a*值、b*值、L*值、pH、滴水损失率、烹煮损失率等指标。结果表明:与对照组相比,试验组平均日采食量显著提高3.25%(P<0.05),平均日增重显著提高5.91%(P<0.05),料重比显著降低2.44%(P<0.05)、屠宰率、半净膛率、胸肌率、腿肌率、a*值、pH分别显著提高2.47%、1.19%、3.37%、2.23%、3.13、1.54%(P<0.05)、滴水损失率、烹煮损失率显著降低2.65%和2.37%(P<0.05)。说明复合益生菌发酵饲料可显著改善纳雍土鸡的生长性能、屠宰性能和肉品质。 In order to study the effect of compound probiotic fermented feed on growth performance,slaughter performance and meat quality of nayong free-range chicken,In this experiment,120 healthy 40-day-old nayong free-range chicken were randomly divided into two groups(control group and test group),the control group was fed with basic diet,and the test group was fed with compound probiotic fermentation feed,the average daily gain,average daily intake,feed to weight ratio,slaughter rate,Percentage of half-eviscerated yield,Percentage of eviscerated yield,Percentage of breast muscle,Percentage of leg muscle,a*value,b*value,L*value,pH value,dripping loss rateand cooking loss ratewere detected.The results showed that:the test group compared with control group,the average daily intake increased by 3.25%(P<0.05),the average daily gain increased by 5.91%(P<0.05),the feed weight ratio decreased by 2.44%(P<0.05),the slaughtering rate increased by 2.47%(P<0.05),the Percentage of half-eviscerated yield increased by 1.19%(P<0.05),the Percentage of breast muscle increased by 3.37%(P<0.05),the Percentage of leg muscle increased by 2.23%(P<0.05),the a*value increased by 3.13%(P<0.05),the pH value increased by 1.54%(P<0.05),the dripping loss rate decreased by 2.65%(P<0.05),and the cooking loss rate decreased by 2.37%(P<0.05).The results showed that the growth performance,slaughtering performance and meat quality of nayong free-range chicken,were significantly improved by compound probiotic fermentation feed.
