大球盖菇两种提取蛋白氨基酸营养评价 被引量:7

The Amino Acids Nutrition Evaluation of Protein of Extracted from Stropharia rugosoannulata by Both Methods

摘要 采用氨基酸分析仪测定大球盖菇碱法提取蛋白(ASRP)和超声辅助碱法提取的蛋白(USRP),应用模糊识别法和氨基酸比值系数法,以联合国粮食及农业组织推荐的全鸡蛋蛋白为标准蛋白,对大球盖菇提取蛋白的营养价值进行了全面评价。结果表明,ASRP和USRP蛋白纯度为69.16%±0.07a和68.57%±0.38a,氨基酸种类齐全,并富含必需氨基酸,含硫氨基酸(Met+Cys)是第一限制性氨基酸含量;EAA/TAA和EAA/NEAA分别为38.69%,0.63和39.51%,0.65,与FAO/WHO提出的参考蛋白质模式相接近,与全蛋相比贴近度分别为0.745,0.737,SRC值分别为73.49,74.79,与大豆蛋白、牛乳、羊乳等食品相似。综合考虑USRP营养评价略高于ASRP。 The content and compositions of amino acids in proteins extracted from Stropharia rugosoannulata by both methods,which were by alkali extraction and acid precipitation(ASRP)and ultrasound-assisted(USRP),was analyzed in this paper.Based on the obtained data,whole hen's egg protein and the FAO/WHO reference model of essential amino acid(EAA)were used to evaluate the nutritional values of these proteins.The results showed that the purity of ASRP and USRP were 69.16%±0.07a and 68.57%±0.38a.The their kinds of amino acid were complete,and were rich in essential amino acids(EAA),the essential amino acids(EAA)/total amino acids(TAA)value and the essential amino acids(EAA)/non-essential amino acids(NEAA)value of ASRP and USRP were 38.69%,0.63 and 39.51%,0.65,respectively,which were accorded with FAO/WHO pattern,according to the amino acid ratio coefficient(RC),the first limiting amino acid content was sulfur-containing amino acid(methionine and cystine);The compared with standard proteins,closeness degree of the proteins were 0.745 and 0.737,respectively,score of amino acid ratio coefficient(SRC)of ASRP and USRP were 73.49,74.79,which were similar to soybean protein,cow's milk,goat's milk,indicating that ASRP and USRP are a source of proteins with high nutritional value.The nutritional evaluation of USRP is slightly higher than that of ASRP.
