摘要
为了研究工业米饭专用米的碾米工艺及产品品质,对工业米饭专用米与普通大米就糠粉含量、理化指标、质构指标、RVA糊化特性指标进行对比,发现工业米饭专用米糠粉含量远低于普通大米,但其营养物质成分也略低于普通米,糊化特性、质构等指标与普通米基本上一致,意味着工业米饭专用米可能更有利于储存保鲜。
In order to study the rice milling technology and product quality ofspecial rice for industrial rice,the content of bran powder,physical and chemical indexes,texture index,and RVA gelatinization characteristic index of special rice for industrial rice and ordinary rice were compared.It is found that the content of rice bran powder for industrial rice is much lower than that of ordinary rice,but its nutrient content is also slightly lower than that of ordinary rice.The gelatinization characteristics and texture and other indicators are basically the same as ordinary rice,which means that the special rice for industrial rice may be more beneficial store and keep fresh.
