摘要 研究利用近红外光谱技术构建白酒酒醅分析模型,实现对泸型白酒酒醅水分、酸度和淀粉含量的大批量快速定量分析。利用趋近归一化(ncl)、一阶导数(db1)等光谱预处理方法对光谱进行处理,使用协同区间偏最小二乘法(SIPLS)、向后间隔偏最小二乘法(BIPLS)等算法对光谱波段进行优化选择,通过偏最小二乘法(PLS)建立快速检测模型,以模型参数、外部盲样的理化数据对新建模型进行评估验证,确定最佳模型。 In this study,we established an analysis model of the fermented grains of Baijiu by using near infrared spectrometry,so as to realize large-scale rapid quantitative analysis of the moisture content,acidity and starch content of the fermented grains of Nonxiang Baijiu.Spectral pretreatment methods such as normalization by closure(ncl)and 1st derivative(db1)were used to preprocess the spectral data,synergy interval partial least squares(SIPLS)and backward interval partial least squares(BIPLS)were used to select the efficient wavelengths,and finally the partial least square method(PLS)was used to establish the rapid detection model.The model parameters and the physicochemical data of external blind samples were used to evaluate the new models,and the optimal model was determined.
