摘要 为了解森林蔬菜竹芋(Maranta arundinacea)的营养价值,采用国家标准中规定的检验方法,对竹芋可食部位(块茎)的营养成分进行检测,并将其与广西常见9种蔬菜进行对比分析。结果表明,竹芋中的营养物质丰富,淀粉、总黄酮、膳食纤维和蛋白质含量较高,分别为26.30 g/100g、23.70 mg/100g、4.72 g/100g和3.23 g/100g;含有多种矿物质元素,磷、镁和锌含量较高,分别为61.50、19.97和5.90 mg/100g。竹芋中含有18种氨基酸,总量为2.15 g/100g;色氨酸的含量最高(68.90 mg/100g);含有8种必需氨基酸,占氨基酸总量的26.98%;含有12种药效氨基酸,占氨基酸总量的82.32%。竹芋中的药效氨基酸丰富且总黄酮含量较高,表明竹芋的药用效能有较可靠的物质基础,可对其进行深入研究与开发。 In order to understand nutrient value of forest vegetable Maranta arundinacea,nutrients in edible parts(tubers)of M.arundinacea were detected by inspection methods specified in national standards,and nutrient components were compared and analyzed with 9 common vegetables in Guangxi.Results showed that contents of starch,total flavonoids,dietary fibre and protein were high,which were 26.30 g/100g,23.70 mg/100g,4.72 g/100g and 3.23 g/100g,respectively.Contents of P,Mg and Zn were 61.50,19.97 and 5.90 mg/100g,respectively.M.arundinacea contained 18 kinds of amino acids,and the total amount was 2.15 g/100g.Content of tryptophan was the highest(68.90 mg/100g).8 kinds of essential amino acids were contained,accounting for 26.98%of the total amino acids.12 kinds of pharmacodynamic amino acids were contained,accounting for 82.32%of the total amino acids.There were abundant pharmacodynamic amino acids and high total flavonoids content in M.arundinacea,which indicated that the medicinal efficacy of M.arundinacea had reliable material basis,which could be further studied and developed.
