摘要
试验拟探讨α-硫辛酸对氧化应激条件下育肥猪生长性能、胴体性状和肉品质的影响。试验选用DLY体重(72.64±4.78)kg育肥猪60头,采用2×2因子试验设计,随机分为4组,每组设3个重复,每重复5头猪。即日粮类型(0、900 mg/kgα-硫辛酸)和氧化应激处理(注射diquat溶液或生理盐水),试验期28 d。结果显示:饲粮添加α-硫辛酸和腹腔滴注diquat对育肥猪的平均日采食量(P<0.01)、平均日增重(P<0.01)、背膘厚(P<0.05)和滴水损失(P<0.01)有显著交互作用。Diquat处理降低育肥猪的平均日采食量(P<0.05)、平均日增重(P<0.05)、屠宰率(P>0.05)、背膘厚(P<0.01)、眼肌面积(P<0.05)以及45 min、24 h时肉样的pH值(P<0.01)和a*值(P<0.01),增加料重比(P<0.05)、滴水损失(P<0.01)和45 min、24 h时L*值(P<0.01)、b*值(P<0.05)。α-LA处理提高平均日增重(P<0.05)、肉样的pH45 min值(P<0.05)、45 min时的a*值(P<0.01)和24 h时的a*值(P<0.05),降低45 min和24 h时的L*值(P<0.01)、24 h时的b*值(P>0.05)和滴水损失(P<0.01)。结果表明,日粮中添加硫辛酸能改善育肥猪的胴体性状和肉质,并对Diquat处理引起的育肥猪生产性能和肉质下降有较好的干预效果。
The study was to investigate the effect of dietary alpha-lipoic acid(α-LA)and diquat on growth performance,carcass characteristics and meat quality in finishing pigs.According to 2×2 double-factor test design,intraperitoneal injection of diquat(8 mg/kg body weight or saline)and dietaryα-lipioc(0 or 900 mg/kg)as the two main factors,and four groups were formed.Sixty healthy DLY pigs with the body weight of(72.64±4.78)kg were randomly allocated to four groups with three replicates per group and five pigs per replicate.The trial periodα-LAsted for 28 d.The results showed that there was a significant interaction of dietaryα-LA and intraperitoneal injection of diquat on average daily intake(P<0.01),average daily gain(P<0.01),back-fat thickness(P<0.05)and drip losses(P<0.01).Intraperitoneal injection of diquat significantly decreased average daily intake(P<0.05),average daily gain(P<0.05),back-fat thickness and eye muscle area(P<0.05),p H value and a*value of eye muscle at 45 min and 24 h postmortem(P<0.01);and significantly increased F/G(P<0.01),24 h drip losses(P<0.01),L*value and b*value of muscle and 24 h postmortem(P<0.01).Dietaryα-LA significantly increased average daily gain(P<0.05),p H value at 45 min and a*value of muscle at 45 min and 24 h;and significantly decreased 24 h drip losses(P<0.01),L value of muscle at 45 min and 24 h,but had a tendency to decrease b*value of muscle at 24 h(P>0.05).In conclusion,dietaryα-LA contributed to the improvement of growth performance and meat quality in finishing pigs,and can suppress the reduction of growth performance and meat quality of finishing pigs caused by intraperitoneal injection of diquat.
