企业为主体构建餐饮服务体系过程中保障食品安全的探索

摘要 随着经济社会快速发展和现代人生活方式的变迁,人们的饮食习惯和作息规律发生了诸多改变,所面临的食品安全风险和健康问题的威胁也逐渐加大。对于目前较为常见的企事业单位自营针对自己员工的餐饮服务的情况,如何落实企业责任以切实保障食品安全是一项重要的工作。中海油集团在建立自身“从农田到餐桌”全链条餐饮服务体系的过程中,梳理了全流程主要风险来源,并针对其从策略、标准、管理、技术多个层面做了许多科学探索,包括自建优质农产品基地,建立合格企业标准体系,管理监督模式的科学构建与创新等。本研究对企业自营餐饮体系的安全风险控制有着积极的指导意义。 With the rapid development of economy and society and the changes of modern people's lifestyle,people's eating habits and work and daily routine have changed a lot,meanwhile the risks of food safety and health problems that people are facing have also gradually increased.Nowadays,more and more enterprises and public institutions carry out corporate responsibility to provide catering services for their employees.How to guarantee food safety during catering services is an important job.In the process of CNOOC(China National Offshore Oil Corporation)group building their own"from farm to table"the whole chain food and beverage service system,CNOOC has combed the whole flow of the main sources of risk,and have made many scientific exploration of its policies,standards,management,technology,including build high-quality agricultural products base,establish a qualified enterprise standard system,scientific construction and innovation of management supervision mode,etc.This study has a positive guiding significance for the safety risk control of the enterprise self-run catering system.
