介绍了烹饪化学课程教学现状,并将智慧树混合式教学模式引入其中,从线上导学、线下导学和课后拓展三个阶段进行探讨,形成了适合烹饪化学的教学模式。线上导学主要是让学生对课程内容进行有效预习,标出不懂的知识点,并及时给教师留言,方便教师根据学生实际情况调整教学结构。线下导学是让教师根据授课内容实行分组教学,可通过提问、讨论和随机点名来提高学生的课堂参与程度。课后拓展是指学生可以随时在智慧树平台的答疑讨论专区进行提问留言,并通过调研资料或相互讨论得出结论。智慧树平台将面授课程和网络资源进行科学合理安排,这种全新的教学模式提高了学生对课堂的期待度,学习效果会更好。

The research introduces teaching status of cooking chemistry courses and mixed teaching of tree of knowledge into it;explores three stages,including online and offline guidance on learning,and expansion after class;and forms suitable teaching model of cooking chemistry.In online guidance learning,teachers should practice group instruction according class content,and improve the student class participation degree through question,discussion and random call.Expansion after class refers to the questioning and messaging in answer questions discussion area of tree of knowledge at any time,and make conclusion through investigation and survey or discussion.In tree of knowledge platform,we can scientifically and rationally arrange face to face teaching and network resource.The brand new teaching model can improve the students expectation of class,and study effect will be better.
