摘要
酵母菌的厌氧发酵机制是微生物发酵机理的重要内容之一。然而,目前教材编排仍主要以产品进行分类,且代谢流过于复杂,使知识晦涩难懂。本研究以酵母菌为主旨,简明扼要地汇总分析了不同发酵条件下其发酵机制,使学生更容易掌握该知识点,促进其对微生物发酵机理知识的融会贯通,提升学习品质。
The anaerobic fermentation mechanism of yeast is one of the important contents of microbial formation mechanism.However,the current textbook layout is still mainly classified by product and the metabolic flow is very complicated,which is difficult to understand.Yeast is selected as the main theme and its fermentation mechanism is analyzed briefly under different fermentation conditions.Therefore,students can master this knowledge easily and promote the integration of the knowledge of microbial fermentation mechanism,and then the quality of learning would be improved.
