摘要
本文着重介绍了当前常用的西式火腿类肉制品加工技术,并以蒸煮火腿和带骨火腿为例,介绍了西式火腿类肉制品加工技术,以期促进西式肉制品加工技术的应用,为我国肉制品加工技术的研究和发展提供有效参考。
This paper mainly introduces the processing technology of western ham meat products,and takes cooking ham and bone ham as an example,and introduces the application of western ham meat processing technology in it.In order to promote the application of western meat processing technology,for China’s meat processing technology research and development to provide an effective reference.
