高校食堂餐饮从业人员食品安全知识调查 被引量:3

摘要 目的:了解高校食堂餐饮从业人员食品安全知识知晓情况。方法:通过问卷星发放问卷进行匿名调查。结果:食堂餐饮从业人员食品安全知识的总知晓率为72.4%。其中,食品加工储存及处理知识的知晓率为97.4%,明显高于卫生法规及消毒相关知识知晓率(66.8%,p<0.001),以及食品中毒知识知晓率(46.2%,p<0.001)。结论:高校食堂餐饮从业人员的食品安全相关知识仍有待加强,尤其是应有针对性地加强卫生法规及消毒、食品中毒方面的健康教育,从而预防校园食品安全事件和传染病的发生。 Objective:To understand the knowledge of food safety knowledge among catering employees in college canteens.Method:The questionnaire was distributed through the questionnaire star to conduct an anonymous survey.Results:The total awareness rate of food safety knowledge among cafeteria catering employees was 72.4%.Among them,the awareness rate of food processing,storage and handling knowledge was 97.4%,which was significantly higher than the awareness rate of hygiene regulations and disinfection-related knowledge(66.8%,p<0.001),and the awareness rate of food poisoning knowledge(46.2%,p<0.001).Conclusion:The food safety-related knowledge of catering staff in college canteens still needs to be strengthened,especially health education on hygiene regulations and disinfection and food poisoning should be strengthened in order to prevent food safety incidents and infectious diseases on campus.
