摘要 随着城市经济和旅游业的发展,餐饮行业发展迅猛,餐饮企业对人才需求的大幅上涨,烹饪专业技术人才市场供不应求,矛盾突出。中等职业学校中餐烹饪专业人才培养工作机遇与挑战并存,面临着更艰巨的任务、严峻的困难和深刻的变革。本文在分析中职烹饪专业人才培养现状及存在问题的基础上,提出专业教学综合改革思路,为中职院校烹饪专业综合发展提供对策研究。 With the development of urban economy and tourism,the catering industry is developing rapidly.Catering enterprises rise sharply in the demand for talents.Cooking professional and technical personnel market supply falls short of demand,and the contradiction is prominent.Opportunities and challenges of Chinese cooking professional personnel training of secondary vocational school coexist,meanwhile facing more difficult tasks,severe difficulties and profound challenges.Based on the analysis of the current situation and existing problems in the training of Chinese cooking professional talents,this paper puts forward a comprehensive of professional teaching ideas for vocational schools cooking professional comprehensive development to provide countermeasures research.
