近红外检测技术在白酒生产中的应用研究进展 被引量:16

Research Progress of Near Infrared Detection Technology in Liquor Production

摘要 白酒根据酿造工艺的不同而各具特色。传统白酒通过固态发酵、固态蒸馏的生产工艺,最终形成了独具特色的风味酒。实现白酒生产过程中相关理化指标快速测量,对于指导白酒生产、提高白酒酒质、增加基酒产酒率具有重要意义。相较于常规检测法中存在的不足,近红外光谱分析技术因其具有快速、无损、在线检测等优势在白酒生产中得到了一定应用与发展。文章通过对近红外分析技术原理及近红外分析模型建立步骤进行概述,综述了近红外光谱分析技术在白酒生产中应用与发展,从酿酒原料、酿酒中间产物以及白酒理化指标检测及分类进行阐述。针对当前近红外分析技术难点探讨未来发展方向,并对近红外分析技术在白酒生产中应用发展进行展望,为白酒生产过程相关参数的快速检测技术发展及相关研究人员研究工作提供参考。 According to different brewing techniques,liquor has its own characteristics.Traditional liquor is produced through solid-state fermentation and solid-state distillation,and finally forms a unique flavor liquor.Realizing the rapid determination of relevant physical and chemical indicators in the production process of liquor is of great significance for guiding liquor production,improving liquor quality and improving base liquor productivity.Compared with the shortcomings of traditional detection methods,near-infrared spectroscopy technology analysis technology has been applied and developed in liquor production with its advantages of fast,non-destructive,online detection and so on.This article outlines the principles of near-infrared analysis technology and the method of establishing near-infrared analysis models.The application and development of near-infrared spectroscopy analysis technology in the detection of liquor raw materials,intermediate products and liquor physical and chemical indicators are introduced.In view of the current difficulties of near-infrared analysis technology,the future development direction of near-infrared analysis technology is discussed,and the application and development of near-infrared analysis technology in liquor production are prospected.Provide reference for the rapid detection technology development of relevant parameters in the production process of liquor and the research work of related researchers.
