人造肉领域国际创新发展态势分析 被引量:6

Analysis of the Development Trend of International Innovationin Artificial Meat

摘要 随着全球肉类消费需求的持续增加、饲养家畜引发的环境负担过重、肉类食品安全以及动物福利问题逐渐突出,人造肉的发展受到世界各国的高度重视。本文从论文和专利的角度出发,对人造肉领域的发展趋势、主要国家、主要机构、研究热点、重要专利和产业发展现状进行分析。结果表明,近年来人造肉领域的科研产出规模不断扩大;美国、荷兰和德国等国家发表的研究论文数量相对较多;美国和中国的专利产出处于第一梯队;荷兰瓦赫宁根大学及研究中心的发文量位居全球第一;ImpossibleFoods公司的专利申请量位居全球首位;研究热点主要聚焦在人造肉原料来源、加工设备、辅料与理化特性等方面;美国的重要专利数量位列全球第一位。研究结果可为我国相关领域未来的研发布局和决策提供参考依据。 With the continuous increase of global demand for meat,the excessive environmental burden caused by livestock raising,increasingly prominent problems of meat food safety and animal welfare,the development of artificial meat has been highly valued by countries all over the world.From the perspective of papers and patents,the development trend,main coun-tries,main institutions,research hotspots,important patents and industrial development status in the field of artificial meat are analyzed.The results show that the scale of scientific research output has been continuously expanding in recent years.The numbers of research papers published in the United States,the Netherlands and Germany are relatively large,and the numbers of patent applications in the United States and China rank in the first echelon.W ageningen University and Research Center in the Netherlands rank the first in terms of the number of published research papers.Impossible Foods rank the first in terms of the number of patent applications.The research hotspots in the field of artificial meat mainly include the source of raw materials,processing equipment,auxiliary materials and physicochemical properties.The number of important patents of the United States rank the first in the world.These research results could provide significant references for China to make overall arrangements of the R&D initiatives and relevant policy making.
