椴树成熟蜜中淀粉酶值的探究 被引量:2

摘要 本文对同一蜜种蜂蜜进行样品采集和淀粉酶值检测,并对贮藏一年的蜂蜜淀粉酶值进行跟踪检测,对不同品质蜂蜜淀粉酶值的差别及淀粉酶值随贮藏时间的变化进行了深入研究.实验可知,成熟蜜淀粉酶值密集区间为6~12 ml/(g^(*)h),成熟蜜淀粉酶值普遍高于水蜜淀粉酶值,且大部分在7ml/(g^(*)h)以上区间,经过一年贮藏后,成熟蜜淀粉酶值降低较水蜜降低趋势更加明显.本实验中成熟蜜和水蜜淀粉酶值均随存储时间延长而呈现降低趋势,成熟蜜淀粉酶值变化与水蜜淀粉酶值变化相似.
