笼养和网养方式下拜城油鸡肉质性状的比较

Comparison of meat quality characters between cage and net rearing in Baicheng oilyy chickens

为了比较笼养和网养两种饲养方式下拜城油鸡肉质性状的差异性,试验采用分组饲养的方法对随机选取的192只初生重相近的1日龄拜城油鸡在笼养和网养两种饲养方式下进行饲养试验,分别在第7,8,9,10周龄末随机选取两种饲养方式下的拜城油鸡各12只(公母各半)进行屠宰,测定常规肌肉品质和化学指标。结果表明:在笼养和网养两种饲养方式下,拜城油鸡在周增重、肉色、蒸煮损失等方面均有一定差异。与笼养饲养方式比较,网养拜城油鸡的活动范围增大,消耗大,饲料转化率较低,使得笼养拜城油鸡的整体周增重大于网养;拜城油鸡胸肌肉色值整体均值小于腿肌;网养拜城油鸡整体蒸煮损失率小于笼养;网养拜城油鸡胸肌和腿肌的横截面积和肌纤维直径均大于同性别笼养拜城油鸡;但饲养方式对拜城油鸡肌肉的pH值没有影响。说明在笼养和网养两种饲养方式下,网养拜城油鸡的肉质性状较好。

To compare the difference of meat quality characters between cage and net rearing in Baicheng oilyy chickens, the experiment adopted group rearing method to randomly select 192 1-day old Baicheng oilyy chickens with similar birth weight under the two feeding methods of cage and net rearing. At the end of the 7 th, 8 th, 9 th and 10 th week of age, 12 Baicheng oilyy chickens(half male and half female) were randomly selected for slaughter and the routine meat quality and chemical indications were determined. The results showed that Baicheng oilyy chickens had certain differences in weekly weight gain, meat color, and cooking loss between cage and net rearing. Compared with cage breeding, the range of activities, consumption raised and the feed conversion rate was lower in net rearing group, which made the overall weekly gain of caged Baicheng oily chickens larger than that of net rearing. The overall mean value of breast muscle color of Baicheng oily chickens was less than leg muscles. The overall cooking loss rate of net-bred Baicheng oily chickens was lower than that of caged cages. The cross-sectional area and muscle fiber diameter of the breast and leg muscles of net-bred Baicheng oily chickens were larger than those of the same sex caged Baicheng oily chickens. However, the feeding method had no effect on the pH value of Baicheng oily chicken muscle. It indicated that the meat quality character of Baicheng oily chickens raised in net were better than those of Baicheng oily chickens raised in cages.
