复方中草药添加剂对生长育肥猪肉质的影响 被引量:17

Influence of Compound Chinese Herbal Medicine Additive on Meat Quality of Growing Finishing Pigs

摘要 该试验旨在为工厂化肉猪养殖研发改善瘦肉型猪肉质的中草药添加剂。试验采用20窝200头60日龄“杜×长×大”三元杂交商品仔猪,分为2组,每组10窝100头,对照组饲喂基础日粮(肉猪全价配合饲料),试验组饲喂基础日粮+复方中草药添加剂,试验期120 d。结果表明,试验组与对照组相比,平均日增重提高8.04%(P<0.05),料肉比降低5.30%(P<0.05),发病率降低38.46%(P<0.01);平均胴体重提高11.26%(P<0.01),背膘厚增高17.78%(P<0.01),其他屠宰性能指标无明显差异(P>0.05);肉色评分增强57.51%(P<0.01),大理石纹增强56%(P<0.01),失水率降低50.17%(P<0.01),熟肉率提高7.83%(P<0.05),肉质嫩度提高16.57%(P<0.01);瘦肉中脂肪含量提高9.12%(P<0.05),其他营养成分无明显差异(P>0.05);瘦肉蛋白质中蛋氨酸含量提高5.36%(P<0.05),谷氨酸提高13.70%(P<0.01),脯氨酸提高12.43%(P<0.01);瘦肉中脂肪的饱和脂肪酸总数含量减少8.1%(P<0.05),总单不饱和脂肪酸含量提高6.3%(P<0.05),总高度不饱和脂肪酸含量提高6.98%(P<0.05)。该试验采用的肉质改善复方中草药添加剂具有促进肉猪生长、提高饲料转化率、改善肉品质的作用。 The experiment was to research and develop Chinese herbal medicine additives for improving lean pig meat quality for industrialized pork pig breeding.In this experiment,20060-day-old“Duroc×Landrace×Yorkshire”cross piglets from 20 litters were selected and divided into two groups,100 piglets from 10 litters in each group.The piglets of the control group were fed with basic diet(full-price formula feed for pigs),and the piglets of the experimental group were fed with“basic diet+compound Chinese herbal medicine additive for meat quality improvement”.The experimental period was 120 days.The results showed that compared with the control group,the average daily gain of the experimental group increased by 8.04%(P<0.05),the feed-to-meat ratio decreased by 5.30%(P<0.05),and the incidence rate decreased by 38.46%(P<0.01),the average carcass weight increased by 11.26%(P<0.01),and the backfat thickness increased by 17.78%(P<0.01).There was no significant difference in other slaughter performance indexes(P>0.05).The meat color score increased by 57.51%(P<0.01),marbling increased by 56%(P<0.01),water loss rate decreased by 50.17%(P<0.01),cooked meat rate increased by 7.83%(P<0.05),meat tenderness increased by 16.57%(P<0.01).The fat content of lean meat increased by 9.12%(P<0.05),and there was no significant difference in other nutrients(P>0.05).The content of methionine in lean meat protein increased by 5.36%(P<0.05),the content of glutamate increased by 13.70%(P<0.01)and proline increased by 12.43%(P<0.01).The total content of saturated fatty acids in lean meat decreased by 8.1%(P<0.05),the total content of monounsaturated fatty acids increased by 6.3%(P<0.05),and the total content of highly unsaturated fatty acids increased by 6.98%(P<0.05).The compound Chinese herbal medicine additive for meat quality improvement in this experiment can promote the growth of pork pigs,increase feed conversion rate and improve meat quality.
