Sulfonation is a common modification found in eubacteria and eukaryotes. This modification is mediated by the enzymes, sulfotransferases(SOTs), which catalyze the transfer of a sulfuryl group(SO3-) from the universal donor 3′-phosphoadenosine 5′-phosphosulfate to the hydroxyl group or amino group of various substrates, including exogenous compounds, hormones, proteins and so on. SOTs are widely involved in various metabolic activities like detoxification, hormone regulation and drug metabolism in animals including human. Likewise, SOTs are believed to play an important role in plant growth, development and adaptation to stress. In this article, the origin, substrate specificity, structure and biological functions of plant SOTs are reviewed, and functional characterization and potential applications of these important enzymes are prospected.
