马桑香菇营养成分分析与食用安全性评价 被引量:4

摘要 采用国家标准规定方法,测定按照自行研发栽培方法栽培的马桑香菇的基本营养成分、氨基酸、矿质元素及其重金属含量及农药残留情况。结果显示,马桑香菇富含蛋白质和碳水化合物,蛋白质含量25.50 g·100-1g-1,含有17种人体必需和非必需氨基酸,其中包含8种必需氨基酸,占总氨基酸的34.68%;维生素B族、C族含量较为丰富、均匀;矿质元素含量丰富,其中Ca、Cu、Mg含量相对较高;重金属元素As、Pb、Hg、Cd等含量均低于国家标准中的限量要求,且不存在农药残留情况。 Using the China national standard methods, the constituents and contents of proteins, amino acids, total fat,total sugar, mineral elements, pesticide, and heavy metal of Lentinus edodes which cultivate according to self-developed cultivation method were analyzed. The results showed that, L. edodes were rich in protein and carbohydrates, and protein content was 25.50 g·100-1 g-1, which contained 17 essential and non-essential amino acids, included 8 essential amino acids, accounting for 34.68% of the total amino acids. The content of vitamin B and C vitamins is rich and uniform relatively. L. edodes were rich in mineral elements, and the content of Ca, Cu and Mg is high relatively. The content levels of heavy metal such as As, Pb, Hg,Cd, etc. were far below the safety control standard of national regulation, and there was no pesticide residues.
