摘要 食品科学与工程专业理论教学与实验实践并重,在教学中引入案例教学对提升教学效果十分有益.文章结合专业课程设置和教学要求,通过介绍案例教学的概念、发展和特点,分析案例教学对提升教学质量的诸多优点,从流程与组织实施、构建案例库等方面探讨了案例教学的实际运用,力求在"双一流"建设创新改革大背景下,为更好的运用案例教学提供参考. For specialty of food science and engineering,the theory teaching and experimental practice are equally important,and the introducing of case teaching methods is beneficial to improve the teaching effect.In this paper,the concept,development and characteristics of case teaching method,and its advantages in improving teaching quality were analyzed,based on the undergraduate curriculum and teaching requirements of food science and engineering.What’s more,the practical application of case teaching method was discussed in the view of case teaching method process,organization and implementation,construction of case database and so on,laying reference for the improving of teaching quality by using case teaching method,under the background of innovation and reform of undergraduate education.
