护眼微量营养素预混料乳剂及其制备方法研究

摘要 以中链甘油三酯为载体,以大豆卵磷脂、酶解大豆卵磷脂为乳化剂,以L-抗坏血酸钠(维生素C)、维生素E(a-生育酚)、叶黄素酯、盐酸硫胺素(维生素B1)、核黄素(维生素B2)、盐酸吡哆醇(维生素B6)、烟酸、枸杞果粉为活性成分,研究探讨了高浓度护眼微量营养素预混料乳剂的配方、制备方法以及营养素之间的协同增效作用。研究结果表明,本研究确定的高浓度护眼微量营养素预混料的乳剂配方,经体外试验证明,各种营养素之间的协同增效作用显著,与对照样品相比,细胞中琥珀酸脱氢酶(SDH)活性、谷胱甘肽过氧化物酶活性、SOD含量都较高,而丙二醛(MDA)含量降低;采用的制备工艺形成了一种稳定的、可与其他液体无限混溶的高浓度微量营养素产品,不仅提高了其中光、氧敏感活性物质的稳定性,而且使其更易于应用于各种液态配方食品中,在室温(25℃)阳光直射的条件下,照射2h后,护眼微量营养素预混料乳剂中叶黄素酯的衰减率为17.91%;而同配方混合乳液中叶黄素酯的衰减率为91.42%。 In this study,medium chain triglyceride was used as the carrier,soybean lecithin and enzymatic hydrolyzed soybean lecithin were used as emulsifiers,and sodium L-ascorbate(vitamin C),vitamin E(a-tocopherol),lutein ester,thiamine hydrochloride(vitamin B1),riboflavin(vitamin B2),pyridoxine hydrochloride(vitamin B6),nicotinic acid and Lycium barbarum fruit powder were used as active components.The formula,preparation and synergistic effect of nutrients were studied.The results showed that high concentration eye protection micronutrient premix showed significant synergistic effects among nutrient ingredients.Compared with the control sample,the activity of succinate dehydrogenase(SDH),glutathione peroxidase(GSH PX)and SOD content in cells were higher,while the content of malondialdehyde(MDA)was decreased.A stable and infinitely miscible high concentration micronutrient product formula was determined.It does not only improve the stability under light and oxygen sensitive active substances,but is also easier to be used in various liquid formula foods.Under the condition of direct sunlight at room temperature(25℃)for 2 hours,the concentration of lutein ester decreased only 17.91%in the premix formula,whereas 91.42%of lutein loss with the same formula by simple mixing emulsion.
